What you need:
-1 cup All Purpose Flour
-1 cup whole wheat flour
-3/4 cup white sugar
-3/4 cup brown sugar
-2 tsp baking soda
-2 cups shredded carrots
-1/2 cup raisins
-1/2 chopped walnuts
-1/2 cup crushed pineapple
-1/2 cup unsweetened flaked coconut
-1 cup unsweetened apple sauce
-1 1/2 bananas, mashed
-2 tsp vanilla extract
-3 tsp cinnamon
-1 tsp allspice
-1/2 tsp cloves
-1 tsp nutmeg
-1/2 tsp ground ginger (or more if you like more of a kick)
-1/4 tsp salt
- Preheat oven to 350F
- Combine banana and sugar until creamy.
- Add all spices. Mix well.
- Add carrots, pineapple, raisins, walnuts, and applesauce.
- Add reaming ingredients and mix well.
- Place in greased muffin tins and bake for 20 mins or until firm.
- Enjoy with apple butter or cinnamon sugar spread
