Homemade Seitan

Seitan is one of my favorite meat replacements. When I found a recipe to make it myself, I was more than excited. Going in a little intimidated, it was much easier than I thought it would be. In my opinion the recipe makes better seitan than you can buy in a store. It has great flavor and it great on salads, sandwiches, or in pretty much anything. Try with BBQ sauce, avocado, red onion and sprouts on cracked wheat for a great sandwich.

What you need:
-1 1/2 cup wheat gluten
-1/4cup nutritional yeast
-1tsp salt
-2tsp spanish paprika
-2tsp cracked black pepper
-4-6 garlic cloves, finely chopped
-6 large basil leaves, chopped
-3/4cup cold water
-4tsp tomato paste
-2tsp olive oil
-2tsp vegetable broth

  1. Preheat oven to 325F
  2. Put all dry ingredients (as well as basil and garlic) in a large bowl and mix together
  3. In a separate bowl, combine wet ingredients (make sure to add the tomato paste last and then whisk it into the mixture)
  4. Add the wet ingredients to the dry and mix with your hands, until you can knead it like a dough.
  5. Knead until fully incorporated
  6. Roll into a log shape and wrap in 2 layers of aluminum foil, twisting the ends to seal
  7. Bake for 90 mins.
