21st celebration Desserts

So my best friend turned 21 this weekend, so we thought we would throw a dessert party at her place. And guess who made the desserts? Me! Yay! All I am going to say is be prepared. Sooooooo good.


Peanut Butter Truffles:
What you need:
-1cup Peanut Butter (don't use the natural peanut butter that has the oil, it won't set well)
-4Tblsp non-dairy butter (earth balance)
-12oz semi sweet chocolate
-Cocoa Powder


  1. Make the filling: Ina large bowl, place the peanut butter and butter and mix well.
  2. Put the filling in a shallow bowl and freeze until firm.
  3. Form the truffles: using either a melon baller or spoon form in to ball. (Mine did not shape well because i used natural peanut butter with oil)
  4. Once the balls are formed, put them back in the freezer.
  5. While the peanut butter is re-freezing, melt the chocolate over a double boiler.
  6. Once balls have re-frozen roll them in the melted chocolate, making sure to work fast, and place them on parchment paper. Once all balls are formed put them in the freezer until consumption.
 

Rocky Road Fudge
What you need:
-1 1/2cups dark (dairy free) chocolate chips
-4 1/2cups powdered sugar
-1 8oz. tub dairy free cream cheese (Tofutti)
-1Tblsp cocoa powder
-1/4tsp vanilla extract
-Ricemello
-Chopped walnuts

  1. Line a baking dish (13x9 works) with parchment paper and set aside.
  2. Place the chocolate chips in a double boiler and melt
  3. While chocolate is melting, cream together cream cheese and powdered sugar until fully combined (I did this in my food processor) Add cocoa powder and vanilla and mix until incorporated.
  4. Once chocolate is melted add is to the cream cheese mixture and mix until completely mixed, it will be very thick and firm.
  5. Spread ricemello (as much as you want) over fudge and swirl into chocolate (this will be difficult and messy) top with chopped walnuts.
  6. Refrigerate until firm, cute and serve.
 

Orange/Mint Truffles
What you need
-1 1/2cups vegan chocolate chips
-8oz non-dairy cream cheese
-3cup powdered sugar
-1 1/2tsp vanilla
-2 capfuls orange extract
-2 capfuls peppermint extract
-Dark chocolate chunks
-Cocoa Powder

  1. Place chocolate chips in a double boiler and melt.
  2. In a food processor mix cream cheese and powdered sugar until creamy. 
  3. Add the melted chocolate and vanilla and mix well.
  4. Separate the mixture in two different bowl. Add orange extract to one bowl and peppermint extract to the other. Mix well.
  5. Cover mixtures with seran wrap and put in freezer until firm.
  6. Once fir take out of freezer and form into balls, refreeze.
  7. Take the orange flavored balls and coat with cocoa powder. Take the mint flavored balls and top with melted dark chocolate. Place back in freezer until service.
